Ingredients
- 1 medium avocado
- 1 cup fresh basil leaves
- 1 clove garlic chopped
- 2 tsp. fresh lime juice
- Himalayan salt & black pepper to taste
- 2 large cucumbers
- Toothpicks
- Paprika
Instructions

Place avocado, basil, garlic, dash of salt and pepper and lime juice in a food processor or blender. Blend until smooth.

Use a vegetable peeler to peel off long, thin slices of cucumbers.

Spread avocado mixture evenly on each cucumber slice.

Pick up one end of the cucumber slice and roll cucumber loosely around the filling. You can use a toothpick to hold together. It actually may just stick together without the toothpick.

Garnish with paprika!
Plan on eating shortly after. I liked them much better fresh!
