To be totally honest, this was my absolute FIRST time eating brussels sprouts. I have avoided them my WHOLE life. I told myself I wouldn’t like them and so I “didn’t like them.” That was until they showed up to my door in prepared veggie box that I ordered.
My mission was to make them so I would LOVE them!
And I will admit, I LOVED them!
Here is how….
Ingredients:
- 1 1/2 lbs brussels sprouts
- 3 tbsp olive oil separated
- 3/4 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 tbsp balsamic vinegar
- 2 tsp honey
- 6 pieces of bacon or turkey bacon cooked.
Directions:

Preheat oven to 425°F.

Line a baking sheet with aluminum foil and spray with cooking oil.

Trim off the outer, dry leaves, cut the bottom off and slice sprouts lengthwise. (I had really big brussels, and when I make them again I will cut them even smaller.)

In a large bowl, toss brussels sprouts with 2 tablespoons of olive oil, kosher salt and black pepper to coat thoroughly.

Transfer the brussels sprouts to baking sheet and roast until tender and caramelized, about 20 minutes.

Place brussels sprouts back in bowl. Add remaining tablespoon olive oil, balsamic vinegar and honey and toss to coat evenly.
- Sprinkle in bacon pieces and toss!
- Devour!
